Hungarian Tart


Another tried and true recipe from my mum for HUNGARIAN TART. It's basically a buttery shortbread with a strawberry jam filling. I'm not exactly sure if this is traditionally Hungarian but it's what we've always called it! 
Ingredients:
125g butter (softened)
2 tablespoons oil
1 egg 
2 teaspoons baking powder (sifted)
2 tablespoons caster sugar
1/2 teaspoon vanilla essence
2 cups plain flour (sifted)
Strawberry jam

Method:
  • Preheat oven to 180°C. Line or grease a baking tray.
  • Cream the butter and sugar with an electric mixer.
  • Add oil, vanilla and egg (lightly beat the egg first). Stir to combine.
  •  Mix the flour with baking powder and gradually add to the mixture. Stir with a spoon until a dough forms.
  • Lay half of the dough on to the baking tray. Flatten it out so you have one even layer.
  • Spread the strawberry jam over this.
  • Use a coarse grater to grate the remaining dough over the top.
  • Bake for approximately 20 minutes until lightly brown on top.
  • Allow it to cool and then slice into squares.
