Jamie Oliver's Quick Portuguese Tarts



Mr Mi picked up this book: Jamie's 30 Minute Meals a while ago, we absolutely love it and cook recipes from it at least once a week. It's packed with great recipes that are easy to prepare and are written in a way that encourages multi-tasking to minimise total cooking time...hmmm...this is starting to remind me of my science experimental days! It's particularly good for those leading a busy work/social life (aren't we all?), I highly recommend this book! We don't always make the dessert component (need to be mindful of waistlines) however, I love Portuguese tarts so had to try Jamie's recipe. Now this is not your typical portuguese tart, it has a lovely sticky orange caramel which gives the tarts an extra lift! YUM! Mi xo

OK, I've had a request for the recipe so here it is.

Jamie Oliver's Quick Portuguese Tarts

  • 1 sheet puff pastry*
  • Ground cinnamon
  • 125g crème fraîche
  • 1 egg
  • 1 teaspoon vanilla extract
  • 5 tablespoons golden caster sugar
  • 1 orange
  1. Pre-heat oven to 200 degrees Celsius.
  2. Sprinkle the sheet of puff pastry generously with cinnamon.
  3. Roll the sheet of puff pastry into a swiss roll and cut into 6 portions*.
  4. Using a standard muffin tin, flatten and mould the 6 rounds* into the muffin hole (I find it easier to roll out each round with a rolling pin).
  5. Bake in the oven until lightly golden, about 10 minutes.
  6. Take the pastry out of the oven and use a teaspoon to gently push the pastry to the side making room for the custard.
  7. In a bowl, mix together the crème fraîche, egg, vanilla, 1 tablespoon of sugar and zest of 1 orange.
  8. Spoon the custard mixture into the pastry cases and cook for a further 10 minutes or until set.
  9. Place 4 tablespoons of sugar and juice from 1 orange into a saucepan on high heat until a nice thick, dark caramel starts to form (keep a close eye on this).
  10. Pour caramel over the tarts and ENJOY!

* I found there was too much custard for 6 tarts as indicated in the recipe, so I used 1.5 sheets of puff pastry to make 9 tarts.
