Chocolate and Walnut Oat Cookies


I had a hankering for a biscuit that incorporated oats and chocolate so I tinkered with my favourite chocolate chip cookie recipe and came up with this! They're slightly crispy on the outside and slightly chewy on the inside, which is just how I like them!


Chocolate and Walnut Oat Cookies:
Adapted from Nigella Lawson's chocolate chip cookie recipe from her cookbook "Kitchen"

150g soft unsalted butter
125g soft brown sugar
50g caster sugar
2 teaspoons vanilla essence
1 egg (fridge-cold)
1 egg yolk (fridge-cold)
150g rolled oats
150g plain flour
1/2 teaspoon bicarbonate of soda
250g dark chocolate chips
75g chopped walnuts
  • Preheat the oven to 170°C. Line a baking sheet with baking paper.
  • Melt the butter and allow it to cool slightly. Mix the brown and white sugar together and pour the butter over them. Beat together using an electric mixer. 
  • Add the vanilla, egg and egg yolk and beat together - Usually in baking, all ingredients should be brought to room temperature beforehand but the original version of this recipe calls for the eggs to come straight from the fridge. I'm not sure why but it works!
  • In a separate bowl, mix together the oats, flour and bicarb. Slowly add this to the sugar and egg mixture. Mix with a spoon.
  • Add the chocolate chips and walnuts. Mix together.
  • Wet your hands with a little bit of water and roll the dough into balls and place these on the baking sheet. Leave about a 5cm space between them as they will spread. 
  • Bake for approximately 15 minutes or until lightly golden. Remove from the oven and leave on the baking sheet for a few minutes to cool before transferring to a wire rack to cool completely.
Best served with an ice cold glass of milk. Enjoy! Na xo
